Beef & Mushroom Stroganoff

Serves four 

A quick, easy family favourite, whip up this delicious Beef and Mushroom stroganoff using Meat with Us beef rump any night of the week.

Ingredients: 

500gm Meat With Us beef rump steaks, cut into thin strips
1 teaspoon paprika
2 tablespoons oil
1 onion, finely sliced
2 cloves garlic, crushed
250g button mushrooms
¼ cup tomato puree or passata
½ cup beef stock
½ cup sour cream 
1 tsp cornflour
Finely chopped parsley

Method:

Place the beef rump strips in a bowl. Add the paprika and toss to combine with the oil. 

Heat a large frying pan over medium-high heat and, add the beef strips in batches, browning them on both sides. Set aside on a plate as you go. 

Reduce the heat to low, add the onion and cook until soft. Add the garlic and cook for a further 30 seconds. Increase the heat, add the mushrooms and cook until they begin to soften and colour.

Pour in the beef stock and tomato puree and bring to a boil. Reduce the heat and simmer for 2 minutes, then stir in the combined sour cream and cornflour. 

Return the beef strips and simmer for 2 minutes. 

Serve over rice or pasta, garnish with parsley and enjoy.
